Paleo Recipes

I have been eating Paleo/Primal/Low Carb for a while now.  I have been trying to find recipes that allow for a little fun now and then.  I have been totally staying away from sugar, but someday I may want something that is a little sweet.  I would like to be able to fix something that my family would enjoy.

Now, for a snack I take Pineapple slices in their own juice and sprinkle cinnamon on them and bake them for about 20 minutes.  It makes a nice sweet dessert and no added sugar.

I probably won't eat any of the following desserts for quite a while, but I am collecting recipes that I might like to try at some time in the future.

I found this Chocolate Chip Scone recipe at elana's pantry.  It looks delicous and is made with coconut flour.  It is sweetened with honey.  The entire recipe only has 1/4 cup honey.  It is made with about 3 ounces of dark chocolate chunks.  The recipe makes 6-8 scones.  Here is the recipe Paleo Chocolate Chip Scones.

Next I found a recipe for Coconut Whipped Cream.  It could be used on some fresh fruit to make it a little more festive for a special treat.  This whipped cream is made from a can of coconut milk, maple syrup and vanilla extract.  The recipe for

The next recipe that I found is a cheesecake.  The crust is made with dates, pecans, and flaked coconut. The filling is made with cashews, coconut oil, agave nectar, lemon juice and vanilla extract.  I found this on corkboard inspirations.  If you want the complete recipe you can find it here Cheesecake.

The recipes all sounded great and the ingredients are okay for my new eating plan.  There is no processed sugar in them. They 
are made with natural sugars and there isn't really much sugar in them.  
If any of you try these before I do, or is you have already tried one of these items please tell me what you thought of them.

Salad in a Jar Update

Last week I made salad in a jar a put it in the refrigerator and waited for seven days to eat it.  The salad was still fresh and crisp!  I thought I would update you on how it turned out.  The lettuce was as fresh as the day I put it in the jar.  I think this is a great way to pack healthy, low cost lunches.  You can use fresh, organic ingredients and pack them on Sunday and have lunches for the entire week.

  1. That is awesome about the salad in a jar, I will be making them now too... I will take my salad dressing separately though and putting it on last minute... This will be much easier to have them all ready for the week. I just have to buy the big jars this weekend :)

  4. OK! I an definitely trying salad in a jar! I LOVE salad and I do make it often but this such a great way to portion it in advance and have each one be fresh! Glad to know it really works!

  5. I JUST found that coco whipped cream on Pinterest today and re-pinned it. I bet it's really good. The salad in a jar is an awesome idea. Good to know that it works and keep lettuce nice and crispy. =0)
