Fried Green Tomatoes
Today, I fixed a favorite food for my husband. He hasn't had any yet this year because of my weigh loss regime. He came home from work just totally exhausted today and I told him I was fixing chicken and asked him what he wanted with it. He said, "Fried Green Tomatoes."
I love Fried Green Tomatoes so then I knew that was going to be a problem for me. Like I said, I haven't made any all summer. I have tomato plants in my garden. Well, I told him that I would make some for him. As I started to fix them, I thought, maybe I can make them without going off my Paleo/Primal diet.
I made them two different ways. I made regular ones for my husband, and then I made some with coconut flour for me. They were great! I wouldn't have them very often since they are friend in oil. For Paleo, you can use coconut oil to fry them.
Recipe for Fried Green Tomatoes
Green Tomatoes (Very Thinly Sliced)
1 egg
1 T Milk
1/4 C Flour
1/4 C Corn Meal
Salt
Pepper
Oil for frying the tomatoes
Directions:
I start by slicing the tomatoes as thin as I can slice them. Some people may like them thicker, but we prefer them very thin. I can get 20 slices from an average size tomato.
Take an egg and add 1 T milk and mix it together to dip the tomatoes in. Depending on how many tomatoes you are cooking you may need to make more of the mixture.
I make a mixture of the flour and corn meal. If you like you can add salt and pepper to the mixture or you can salt and pepper them individually after you have battered them. You just need to salt and pepper them according to how much you like to use.
Next, heat oil in a large skillet. Normally, I use canola oil. Heat over medium heat.
Once the oil is hot you dip a tomato slice into the egg mixture and then into the flour mixture. Put into the skillet to fry. Turn the tomatoes occasionally. Once they are nicely browned and crispy put them on a paper towel lined plate to soak up any excess oil.
They are all ready to eat. Enjoy!!!
Since I am eating Paleo/Primal I used coconut flour to batter my tomatoes. I also fried them in coconut oil.
I have found that the coconut flour has a little sweet taste but I liked in with the tomatoes.
If you have never had Fried Green Tomatoes you should try them!

ReplyDeleteI love the idea of making a healthy snack or appetizer with green tomatoes. I've actually never cooked with them before! Hubby loves most things fried so knowing him, if I tried it, he would love it! Lol! Thanks for sharing! Your step by step pics are awesome! :)
